Prepare special meals or substitute items. Control oven, broiler, grill and toasting oven temperatures. Remove food from freezer and defrost in refrigerator. Ensure proper portioning, presentation and garnishes. Maintain food logs. Monitor quality and quantity of food prepared. Indicate when assistance is required during busy periods. Inform chef of surplus food items to be used in daily specials. Inform Food and Beverage staff of discontinued items and menu specials. Ensure quality of food products. Prepare and cook food according to recipes, quality and presentation standards, and food preparation checklists. Prepare cold foods. Assist management with hiring, training, scheduling, evaluating, motivating and coaching employees; and serve as a role model. Follow and enforce all line safety policies and procedures; report maintenance needs, accidents, injuries, and any work conditions deemed unsafe; complete required safety training and certifications. Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; and protect company assets. Anticipate and address customer service needs. Use clear and courteous language in all communications. Develop and maintain positive and constructive working relationships with peers; work together and assist one another to achieve common goals; listen and respond appropriately to the concerns of other employees. Ensure quality requirements and standards are met. Be accustomed to standing, sitting, and moving for extended periods of time. Reach overhead and below knees, including bending, twisting, pulling, and stooping. Move, lift, carry, push, pull and place objects weighing up to 25 pounds (11.4 kg) without assistance. Perform other reasonable duties as requested by supervisors.
